My crunchy blueberry french toast recipe is a combination of a recipe the chef at the Shangri- la in Boracay ,Philipines shared with me that I slightly remixed. While in the Boracay on holiday, I had the best french toast I’ve ever tasted in my life! It was so delicious I had to personally ask the chef to share with me all the ingredients that were in the batter, I know that flavor could not just be eggs,milk and vanilla . So keep in mind… he shared all of the ingredients not measurements. So through trial and error I was able to find a nice flavor balance. Also his version was made with raisin challah bread, for this recipe I opted to use plain challah.
List of ingredients & measurements (This recipe will yield 5-6 pieces of french toast )
- 3 eggs
- 1/2 loaf challah bread (cut slices 3/4″ – 1″ thick)
- 2/3 cup milk
- 1/2 cup whip cream
- 1/4 cup honey
- 1 tbsp cinnamon
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 3 cups corn flakes of your choice (I used “kashi ” organic indigo morning flavor ) this has freeze dried dark berries which compliments the recipe nicely
- 1 lrg ziplock bag
Topping
- 1 cup blueberries
- 1/4 cup sugar
- 1 tbsp fresh lemon juice
- confectioners sugar for garnish (sprinkle as much or as little as you prefer )
This sifter comes in handy for the perfect powered sugar sprinkle later …
Here’s where the large ziplock bag comes into play. Place the 3 cups of cereal into the bag and smash until they are crumbs as shown here.
In a large bowl mix eggs,milk,honey,whipped cream, cinnamon,vanilla extract & salt together to form the french toast batter . Place crumbled cereal in a plate right next to the batter for an easy assembly line.
After dipping the bread in the batter ,completely cover all sides with the cereal topping .
Place french toast in a frying pan with butter until all sides are golden brown.
Add blueberries ,lemon juice & sugar to a sauce pan bring to a boil /reduce to simmer /cook until berries burst about 5-7 mins
Add blueberry topping & sprinkle confectioners sugar

I will post another yummy alternative made with raisin challah bread w/o the crunchy topping the way it was made in Boracay. I loved putting my own spin on this recipe ….and I think I’m now obsessed with crunchy french toast! I hope you enjoy !
